The great classics: tête de veau (calf's head), bavette à l'échalote (flank steak with shallots), blanquette de veau à l'ancienne (veal stew)... share the bill with the timeless favourites from our gourmet heritage: Pâté croûte et persillé de Bourgogne maison (home-made pâté with Burgundy parsley), Bobosse pike quenelles with American sauce, Fallot old-fashioned mustard veal kidneys, supreme de volaille crème d'Epoisses (chicken breast with Epoisses cream) and as a sweet epilogue: Pavlova, baba au rhum (rum baba), soufflé chaud au cassis (hot blackcurrant soufflé)...
